Lisa makes Mediterranean Herb Crusted Tilapia

This blog is taking a change in direction. Rather than Lisa making a dish and posting on it my lovely partner prefers to remain silent. So we'll do the next best thing. After she makes one of the recipes I will report about it.

Over the last year Lisa has actually made Mediterranean Herb Crusted Tilapia four times. She followed the recipe as is once then made it three times without the spinach. Without the spinach everything blended and seemed to cook better. 

I will admit for the longest time I've never been a fan of seafood. The last few years I've had more in an attempt to eat healthy. Tilapia is a nice flakey white fish. Made in this recipe it is one of the most delicious I have ever tasted. The fish, herbs and red peppers blend together wonderfully and I savor every bite. Another big plus for me is that it is great as leftovers. I prefer it chilled out of the fridge and all the flavor stays locked in.
